I have tried making many different types of vegan bacon bit recipes that I found online over the years and I never really liked them because the spices were always off. So I started experimenting on my own and this is the recipe that my family likes.
1 pack extra firm tofu pressed
1/2 cup water
½ cup soy sauce
1/4 cup brown sugar or maple syrup
2 tablespoons oil
2 tablespoons Worcestershire (see recipe below if you can't find vegan Worcestershire at your grocery store)
3 tsp. Liquid smoke
1/2 T onion powder
1/2 T garlic powder
1/2 t smoked paprika
Press tofu for two days or buy tofu that is already pressed. The dryer the tofu, the better.
Mix together all your marinade ingredients.
Crumble the pressed tofu, add to the marinade, stir, and place in the fridge for one hour or longer.
Strain the extra marinade out of the marinaded tofu. I use the back of my hand to press out as much marinade liquid as I can.
You can cook the tofu in one of two ways or a combination of both.
Cook marinaded tofu in a skillet with a bit of oil until brown and the texture is to your liking.
Spread tofu on a parchment lined baking sheet and bake in the oven at 450 degrees for 10-20 mins stirring half way.
In most cases, non publicly traded food brands have accidentally vegan Worcestershire sauce. Check your stores brand. For example, if you have a Harris Teeter grocery store, their's is accidentally vegan.
Vegan Worcestershire Sauce
1 cup apple cider vinegar
1/3 cup soy sauce
3 tbsp brown sugar
1 tsp dijon mustard
1/2 tsp ground allspice
1/2 tsp garlic powder
1/2 tsp onion powder
1/8 tsp black pepper
Add all ingredients to a pot, and cover. Turn the heat on low. Heat until it simmers.
Remove from the heat and allow to cool to room temperature.
Store in a jar in the fridge for up to 1-2 months. Use your best judgment. Honesty I've had mine in the fridge for... going on 6 months and it gets better as it ages.
