Who doesn't love loaded nacho's?

Taco meat
For the meat you have a lot of choices. TVP, Gardein beefless grounds, Beyond ground, Impossible Burger, the list goes on. For us, we found that Trader Joe's has the best beefless ground protein and it's so inexpensive and the taste and texture is on point.
Sauté an onion
Add your meat
Add a Taco Bell seasoning pack and 1/4 to 1/2 cup water
Cook and stir until it's hot, meaty and thick. this take less than 5 mins.
AJ’s Nacho Cheese
It's so easy, fast and inexpensive.
Toss all of the following in a blender and blend smooth.
Wet Ingredients
2 cups of milk
1/2 cup jarred pimientos
8 mild jalapeño slices
1 T mild jalapeño juice
2 reg jalapeño slices
Dry Ingredients
1/2 cup nutritional yeast (your best and cheapest option is Anthony's on Amazon)
3T tapioca starch/flour (you can purchase this at most grocery stores in the baking isle or get the Anthony's on Amazon. We use a ton of Anthony's products) You can use corn starch but we prefer tapioca.
1 1/2t Lawry’s seasoning salt.
2t onion powder
1t garlic powder
Pour your blender contents into a sauce pan over med/high heat and whisk until desired thickness. It only take a few minutes.
Time to assemble.
Fill your plate with tortilla chips.
Drench them with cheese.
it's time for the meat, make it a big helping.
Top with sour cream (we use Tofutti sour cream but there are so many different types of dairy free sour cream out there to choose from)
Sprinkle with any microgreen, chives, diced tomatoes, jalapeños, olives, what ever you like.
