This is one of those recipes that I don't have measurements for because I just put a little of this and a little of that. Im sure that when you make or used to make pre-vegan egg-salad, you don't/didn't measure your ingredients either. We like to top ours off with tomato and micros.
1 pack of organic extra firm tofu (you can press it if you want a firmer texture) roughly chopped
finely chopped onion
Pepper to taste

This is a salt that literally smells like eggs and gives that "eggy" taste. I'll never forget the first time we used it, it freaked us our a bit because our brains were telling us it was eggs. Our kids were a bit freaked out thinking we were eating eggs. This can be purchased online but if you have an Indian grocer near you, go there, it's so much cheaper and better quality. Make sure you get the ground Kala Namak, it will look purple and not the rocks. I made that mistake the first time I purchased it and then I ruined my coffee grinder (now it's my spice grinder).
We use black salt for our "scrambled" Just eggs, omelet's, quiche, etc.
